cupcakes-a-go-go

vegan chocolate cupcakes with orange buttercream frosting also made for thadeaus' 25th birthday party. a crowd favorite, with one partygoer remarking, "those were vegan?"
the cupcakes themselves were pretty simple to make. the orange zest in the vegan buttercream was a spur-of-the-moment addition, but added complexity to the classic flavor combination of chocolate and vanilla.

The Cupcakes:
1 1/2 c. flour
3 tbsp sifted cocoa
1 tsp baking soda
1 c. sucanat
1/2 tsp salt
5 tbsp coconut oil, liquified
1 tbsp apple cider vinegar
1 tsp vanilla extract
1 c. cold soy milk
1/2 c. chocolate chips
Preheat your oven to 350 degrees.
Put your flour into a mixing bowl. Add cocoa, baking soda, vegan sugar and salt--
mix well.
Make three deep holes in the dry mixture. Into the first, pour the oil; into the
next, pour the vinegar; into the third, pour the vanilla.
Pour the soy milk and chocolate chips into the bowl.
Mix the wet and dry ingredients together until there aren't any lumps.
Line 18 cupcake tins and fill each 2/3 full with batter.
Bake for 15-18 minutes, testing with a fork or toothpick.
The Frosting
1/2 c. margarine
1/4 c. soymilk
3 c. powdered sugar
1 1/2 tsp vanilla extract
1 tbsp powdered orange rind*
Cream the margarine and soymilk together. Add 1 1/2 cups of the powdered sugar and
beat well. Add the remaining powdered sugar, vanilla extract, and powdered orange
rind and beat until light and fluffy, approximately two minutes.
*For the powdered (or ground) orange rind, wash an orange before you eat it, save
the peel and let it fully dry-- this can be more quickly achieved in your oven on a
low heat or by using a food dehydrator. When the peel is dry and brittle, place it
in a food processor and process until ground.

this weekend i drove a total of 25 hours to come spend some time in the grand ol' NYC. I was sitting here at home reminiscing about gay times and shennanigans that were had in the city that never sleeps. Then i came to your blog and all i could think about was WHY THE HELL DIDN'T WE EAT THESE CUPCAKES!!!
Seriously, though, it was great to see you. Next time we're dragging you along, too, kittie. The three of us will spend countless hours baking cinnamon tofu sticks. MMMM... its just not a baked good without some processed, packaged, and transported soy product. Am i right? Of course i am.
